Mini Blueberry Muffins

This yummy recipe comes from the 3ABN Breakfast Cookbook. That little book has some great recipes that are so easy to make. You can find more easy recipes on their website: and you can purchase the cookbook here or pick one up at our next cooking class!


2 cups whole wheat pastry flour

1 tbsp baking powder

½ tsp salt

1/3 cup organic sugar or sweetener of choice

1 ¾ to 2 cups plant milk

1/8 cup oil of choice

1 tsp vanilla

1 cup frozen wild blueberries


1. Preheat oven to 350F

2. In a large bowl, sift flour, baking powder, salt and sweetener together.

3. Add frozen blueberries and mix with flour. Make a well in the center.

4. In a separate bowl, combine all wet ingredients and pour into the center of the dry ingredients and fold together until smooth.

5. Spoon mixture into sprayed muffin pan and bake 20 to 30 minutes (depending on your oven), or until toothpick inserted in the middle comes out clean.
